Zucchini and Goats cheese bruschetta!

If you are looking for a quick starter’s recipe – look no further!! I have found the most delicious, decadent and EASY recipe to serve to your guests. This will only take you a maximum of 15 minutes to make and is also a great last-minute addition to your dinner party as it only asks for a few ingredients. I am one of those people that loves to try the whole many, this is why creating little “snack bites” are way more appealing to me than a full on meal. This recipe is perfect for a tapas style dinner party or just as a starter. If you have never had zucchini raw, your really are missing out! Cutting them up with a peeler knife made me feel really chef-ey! πŸ˜€

All you need are the simplest ingredients that you probably have at home already and a few minutes of your time. As there is no cooking involved, it literally only takes 10 minutes if you are a fast peeler!

  1. Thinly slice the zucchini (I used a potato peeler) and place in a bowl.
  2. Add the lemon juice, olive oil and season to the peeled zucchin. Mix until your zucchini is covered in juice and oil.
  3. Use a fork to soften the goat's cheese in a separate bowl. This makes it easier to spread on the bread.
  4. Spread on the toasted baguette or bread and top with the marinated zucchini stripes. Serve immediately
