Oatmeal Latte!

When I came across this article on bonappetit – a recipe that combined two of my greatest loves (oatmeal & coffee!) – I knew this would need to be recipe tested ASAP!

My love of coffee did go as far as me going cold-turkey last summer because I thought knew I was addicted to it. But let’s face it, its too good to leave out forever. I used to drink several cups of coffee a day, now I have it as an occassional treat and stick to a herbal or mushroom coffee (no jitters, anxiety, spike in energy levels, etc.) on other days. (If you want to know which brands I use, let me know!)

I seriously love coffee (especially lattes!) and oatmeal (in any shape or form as bars, porridge, in energy balls, etc. etc.). Combining the two was a new concept to me and I am sure may sound a bit weird to you too at first, but trust me – it was as delicious as it looks! Do you guys remember the quaker oats instant oatmeal packs? Where you just added hot water? I used to LOVE those, but they were so full of sugar but guess what, I finally found something that tastes JUST LIKE IT! I loved the brown sugar one and this comes so close to the taste and consistency its unreal! πŸ˜€

I do try to cut out dairy as much as possible, so I adapted the recipe from bonappetit to a vegan one.. Using oatmilk instead of regular milk and just to make it a little healthier, I used coconut sugar instead of brown sugar. It worked well but the milk froth didnt come out as frothy as it would have with regular milk so the stovetop granola didnt stay on top as well. But still, I am sure the taste is just as good if not better! (as there’ll be no bloating after and you can live life with #noregrets) πŸ˜‰

I must admit it does take a little longer to make, so it may be a recipe for early birds or need to be reserved just for the weekends. You know what the best part about this recipe is? You get to sip & scoop! It’s like a delicious dessert for breakfast. I topped off this coffee with my stovetop granolaΒ (the recipe for which will be on the blog soon) which made it extra decadent and added a special crunch.

Instructions
  1. Place the oats and 1 1/2 cups of oatmilk in a saucepan over medium-low heat.
  2. Add the salt and cinnamon. Stir to combine.
  3. In the meantime, froth or steam the remaining 1 cup of oatmilk.
  4. Add about 3/4 cup of the steamed, frothed oatmilk to the oats.
  5. Cook, stirring often, until the oats are super creamy and milky.
  6. Remove from heat. Stir in the remaining oatmilk. Stir in the coconut sugar and vanilla extract.
  7. First, spoon the oatmeal into your mugs equally. Then top each off with a shot of fresh espresso.
  8. Sprinkle with some granola .
  9. Sip and spoon! πŸ˜‰
