I needed a special cake for Mama’s day and since spring was just about to turn all the leaves green again, I thought why not opt for a fruity cheesecake and adding some decadence to it with a creamy vanilla pudding?! The original recipe called for blueberries, but I had raspberries on hand and wanted to incorporate them into this recipe. As you can see, it turned out pretty well, looks just as pretty (if not prettier) and tasted absolutely delicious!
