DOUBLE CHOCOLATE COFFEE BUNDT CAKE!

We all know February is the month of love…but more importantly, it is the month of CHOCOLATE! πŸ™‚ So as a tribute to the month of love chocolate you may feel inclined to make my easy coffee chocolate bundt cake recipe! Coffee and chocolate go so well together, eventhough the cake only has the slightest hint of coffee – it perfectly accompanies the heavy chocolate flavor of this cake.

Note: After having this cake, chocolate overdose is guaranteed!

I served this chocolate with a serving of my cinnamon and cocoa whipped cream (if you want the recipe for that, let me know!) The cake is really easy to make and this recipe is definitely fool-proof. Cake
  1. Preheat the oven to 180Β°C degrees.
  2. Brew the coffee and put in a heat resistant bowl.
  3. Add the butter to the hot coffee and mix well until fully incoporated.
  4. Add the cocoa powder and mix until fully incorporated. Let the mixture cool for a few minutes.
  5. Add the sugar, baking powder, salt and mix well.
  6. Add the flour little by little and mix well after each addition until well incorporated.
  7. In a separate bowl, whisk together the eggs, sour cream and vanilla. Once well combined, mix into the chocolate batter, stirring until thoroughly combined.
  8. Thoroughly grease a 18-20cm bundt cake pan with butter.
  9. Pour the batter into the prepared pan.
  10. Bake the cake for 50 to 55 minutes, until a skewer inserted into the center comes out clean. (Mint took about 55 minutes)
  11. Remove the cake from the oven, wait 5 minutes, and turn the pan over onto a cooling rack. Let the cake cool completely before icing.
Icing
  1. Melt the chocolate over a double boiler.
  2. Remove from the heat, and stir until the chocolate melts and the mixture is smooth. Add the heavy cream and mix until well combined.
  3. Drizzle the icing over the top of the cake, letting it drip down the sides.
